I noticed it when Mahlia was two. We were shopping at a store and she was singing her favorite song by the Beetles, “Here Comes the Sun”. As we were leaving the store I saw it…the light…the blessing. We got this recipe from one of the most amazing cooks I know…my mother-in-law. This recipe truly has ruined me from eating salmon out at a restaurant. Trust me, I have tried ordering Salmon on many occasions, and nothing compares to this recipe! Except, salmon sashimi, salmon has always been my favorite go-to for sushi! About a year ago I rediscovered that I like to read! Once we had babies, if I had any time to read, it was typically in the middle of the night while I was pumping or nursing and it was usually the Baby 411 book to learn why my baby hiccupped or how to actually sleep through the night. Imagine there was an emergency number only for the sole purpose to be used when a Mom gets sick. A “MOMergency” number. You’re home making breakfast for the kids and getting them ready for school when your throat starts to feel scratchy, your body aches and you feel like you have been hit by a truck. No worries, you call the “MOMergency” number and a vehicle shows up at your house. In this “MOMergency” vehicle is 1) the Nanny; 2) a housekeeper; 3) a chef; and last but not least 4) your own care taker that whisks you away to a private sanctuary spa to recover properly. I have become a bit obsessed with heavy whipping cream over the past year. I believe it started when I went through my brief crêpe phase and learned to make whip cream to fill them. The crêpe phase didn’t stick but the whip sure did! It is so easy and tastes so much better made from scratch! I love to buy the heavy whipping cream at Aldi’s, it’s about half the price from other grocery stores and I love that it lasts a long time in the fridge!
